As multiple users can edit an article, then it would be very useful to be able to WATCH the article for edits.

This would be useful to users interested in the topic. But its also useful for the co-authors to be alerted that the article has changed. It would make sense to always alert co-authors of any new edits. Because that will prompt the co-authors to review the edit and may inspire and stimulate the co-authors to submit new edits.

Having an alert for any edit would be nice.

Optimally, there would only be alerts for major edits and not minor edits like spelling corrections. But that would require a function for the edit to be marked as minor by the co-author that submits the edit.

There are no EDIT functions in XF, XFRM and XFMG that send notifications to users watching a piece of content that has been EDITED (not to be confused with the moderator option to alert the author of the piece of content).

There is a POST AS UPDATE function for an Article. POST AS UPDATE is designed to send notifications (alerts and emails) to members that are watching the article, that the article has been updated. An Update is an Edit that is logged as an Update (sets the last update date for the article and sends out notifications). An Edit is NOT an update (does not set the Last Update date for an article).

Is there a reason you can't use the POST AS UPDATE feature?
 
That's quite a good point. Maybe that can suffice.

My point was for the case of co-authors and contributors to get an alert when the article is edited. Such alert will prompt the co-authors and contributors to review the change and if needed add more content.

You would have to develop your own system to do that.
