Sounds like you've not yet set AMS permissions for each user group (
there are a ton of them). The first thing you should be doing after install is setting permissions (one of which controls whether articles go into moderation or not).
Listed below are all the AMS permission (as you can see, there are A LOT).
The permission that I've circled is the one that allows you to submit articles without approval (this is set to NO by default).

Once you SET all these permissions (for each user group), then things will probably make more sense
You will also want to go though the 100's of AMS options and make sure those are all set to your liking.
You will also want to edit the example category as it just has some default settings. Categories have A LOT of settings.
That would be the Associated Discussion thread, not the article itself (articles in the moderation queue do not have any [Deleted] tags (that is purely a THREAD thing. Items in the moderation queue tell you want Content Type they belong too.
As you can see in the image, I've circled the CONTENT TYPE (which each item in the queue will display).

This is what an Article will look like in the queue. You won't be able to see it until you give yourself the AMS moderator permissions (to view unapproved content and the ability to edit any article).
