We have hundreds of categories and will have thousands of items. Is there way to create dynamic route filters?

In order for anyone to begin to help you, you would need to explain more details of what you are trying to accomplish. The XF Route Filters system is not designed to handle complex dynamic routing like the OP of that suggestion thread wants.
If you are referring to the suggestion that you posted in, the entire purpose of that suggestion is that what they want to do is not possible without customization to the Core XF Route Filters system (which would require custom development).
Anyway... can you explain exactly what you are wanting to accomplish?
