As per title ( and per request by @David Denton ), I've added a new Sportsbook Option 'Minutes dropdown interval' (located in the Misc options section of the Sportsbook Options).
This new Sportsbook Option lets admins set the interval for the "minutes" dropdown to either 1 minute interval or 5 minute interval (which the later is the default).
1 minute interval includes every minute from 0 - 59.
5 minute interval (default) includes every 5th minute from 0 - 55.
