    Would it be possible to add an each way option to the Sportsbook @Bob?

    The betting term "each way" only applies to Horse Racing. Horse Racing wagering is specialized and is not within the scope of standard "outcome" based wagering systems. If you need specialized horse racing wagering, you'll need to pursue custom development on your own.
